This is a better photo of the carriage at La Florentine (just for Denis!). It's called a caleche.
In the tourist season, Popeye the horse carries people around in it to earn his keep. Popeye is a Comtois horse. This is a very old draught breed which comes from the Jura mountain region between France and Switzerland. Popeye's colouring is typical - they are any shade of chestnut, with a flaxen mane and tail - a bit like a large Haflinger!
